SubLIME Tequilas

Some people may cringe when they hear “tequila!” shouted. Most likely they over-served themselves with tequila, salt, and lime, a true sign of a novice. Many moons ago, a wise lady explained to me the truth about tequila. Think about the day in chemistry class when you were given a test tube, you added sodium (NA-salt), lime (acid) and then alcohol; think Molotov Cocktail in your belly! Oooooff!

Tequila, however, can be enjoyed in moderation.

Tequila comes in many different versions, offering different flavor profiles that can be paired with or without food. From a handcrafted tequila to a vintage select tequila, you can expect to spend anywhere from $32.00 to $500.00 plus for a bottle.

Tequila is made from the distillation of blue agave plant juice.

Pure tequila, made solely from the agave plant, begins its life in fermentation vessels. Mixto tequila (tequila that is not 100% agave) must first be mixed with sugar or molasses before fermentation begins. Then, depending on the subsequent process, the tequila will become one of the following five types.
