Congratulations for surviving 2020… we did it!! While many of us decided to indulge in some high calorie, high fat, high sugar comfort foods during the holiday season (I have no regrets), I am always looking for better options than fried potatoes smothered in cheese and sour cream. Not that it is a bad option, just one we should work on limiting as we embrace a future of hope and change. May I suggest that part of the new year should include the lovely sweet potato.
